Maple Dijon Sheet-Pan Chicken with Fall Vegetables
Complete recipe — ingredients and instructions from all article pages.

A tangy maple-Dijon glaze brings chicken thighs, sweet potatoes and Brussels sprouts together on one pan. The vegetables get a head start so they roast through while the chicken cooks. Leave room between the pieces for browned edges instead of steamed vegetables.
Prep: 20 minutes · Cook: 35 minutes · Yield: 4 servings
Ingredients
- 1 pound sweet potatoes, cut into 3/4-inch cubes
- 1 pound Brussels sprouts, trimmed and halved
- 3 tablespoons olive oil, divided
- 3/4 teaspoon kosher salt, divided, plus more to taste
- 1/2 teaspoon black pepper
- 1 1/2 pounds boneless skinless chicken thighs
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
How to Make It
- Heat the oven to 425°F. Toss sweet potatoes with 1 tablespoon oil and 1/4 teaspoon salt on a large rimmed sheet pan. Roast for 10 minutes.
- Mix Dijon, maple syrup, vinegar, garlic and thyme in a bowl. Put 2 tablespoons of this clean mixture in a separate bowl for finishing; keep it away from raw chicken. Coat the chicken with the remaining glaze and 1 tablespoon oil.
- Toss Brussels sprouts with the remaining oil, salt and pepper. Add them to the pan and turn the sweet potatoes. Nestle in the chicken, spreading everything in a single layer. Use a second pan if crowded.
- Roast for 20–25 minutes more, turning vegetables once, until the chicken reaches 165°F in the thickest part and the vegetables are tender. Rest chicken for 5 minutes. Brush with the reserved clean glaze and serve.
Tips for the Best Result
Cut sweet potato pieces evenly so they finish together. If the vegetables need more color after the chicken is done, transfer the chicken to a plate and roast the vegetables for a few extra minutes.
Storage and Reheating
Refrigerate within 2 hours in covered containers for up to 3 days. Reheat chicken and vegetables to 165°F.
